The Story

After several years of brewing beer in their kitchen and selling it to their friends, Tore Gynther and Tobias Emil Jensen founded To Øl in 2010. Their first beer was a collaboration with Mikkeller and, with such an auspicious start, they were always going to do well. Coupled with their relentless pursuit of big flavours and perfectly balanced beers, they have garnered a well-deserved reputation for innovation and technical skill.

They started out as Gypsy Brewers, lending in on other breweries spare capacity to produce their beers. By 2012 they had made it onto Ratebeer’s list of Top 100 breweries in the world, by 2014 they were in the top ten. No mean feat considering they did it all without a brewery to call home.

This all changed in 2020 when the To Øl team took over a former food factory in the Western part of Zealand, Denmark, to begin building their new, state of the art brewery. Now up and running, To Øl city as it is known locally, is not just home to the brewery. In true Gypsy Brewing style, To Øl have opened up the facility to craft beverage producers from across Denmark. Allowing a number of businesses previously limited by space and resources to flourish. It has quickly become a collective of the most talented craft beverage producers in Denmark, from Rum Distillers to Cider and Kombucha producers.

For tonight’s beer, we have House of Pale, one of the recipes taken from To Øl’s mad laboratory in Copenhagen, BRUS. A New England Pale ale with Equanot hops. It’s seen many changes and tweaks over the year, experimenting with hop doses and overall ‘crispiness’. The result is a super-smooth, refreshing pale with huge notes of citrus and stonefruit balanced against a thick, luxurious mouthfeel and low bitterness.
